        Leaf Lettuce Salad



Leaf lettuce salads are always a welcome compliment to any bison meal. The following are two of our favourites.
        Standard Vinaigrette Salad Dressing For Leaf Lettuce Salad
         Ingredients
1/2 cup
1 1/2 tbsp
2 tbsp
1 tsp
1/2 tsp
1/2 tsp
1/4 tsp
olive oil
lemon juice
red wine vinegar
sugar
salt
dry mustard
ground black pepper (optional)
         Directions
  • Place all ingredients in a small container. Close tightly and shake until well combined. Can be made in advance and stored in the refrigerator for several days. Dressing will clot at cold temperatures. Remove to room temperature for an hour and re-shake before using. Makes enough dressing for 8 side dishes of salad.



        Kid Approved Honey Ginger Salad Dressing
    • Kids of all ages who are fussy about eating salad will love this one. It's the honey in it that wins them over every time. This salad dressing can be stored in the refrigerator for several weeks. The recipe makes enough for up to 20 side dishes of salad.
         Ingredients
1 cup
1/2 cup
1 small
1/4 tsp
1 tbsp
2 tbsp
4 tbsp
1/4 tsp
canola oil
honey
clove garlic, minced
paprika
ginger root, finely chopped or grated
lemon juice
cider vinegar
salt
         Directions
  • Put all ingredients in a blender or food processor and process at high speed for 3 minutes. Dressing will be quite thick after processing. Salad greens should be slightly damp before adding dressing and tossing. Store remaining dressing in the refrigerator in a closed container. Dressing may separate in storage. When required again, remove to room temperature for an hour and re-shake to blend.
