Chopped bison steak has a meatier steak-like texture than regular ground burger.
The best chopped steak burgers are made from coarsely ground bison sirloin that has some additional fat added.
For a juicy burger, fat content should be close to 20%.
In a pinch, coarsely ground eye-of-the-round can be substituted for bison sirloin.
For the best steak taste nothing much more than onion, salt and pepper should be mixed into the chopped steak.
I recommend topping off this incredible burger with melted old cheddar cheese.
Ingredients

very finely chopped sweet onion
salt
freshly ground black pepper
chopped bison steak (20% fat content)
vegetable oil
coarsely grated old cheddar cheese (optional)
Directions
In a large mixing bowl combine the finely chopped onion with the salt and pepper.
Add the chopped steak and combine by hand until the ingredients are evenly blended.
Shape meat mixture into 7 burger patties.
Place patties in a single layer on a cookie sheet or serving tray.
Cover loosely with plastic wrap and refrigerate for 1 hour.
Pre-heat barbecue to medium-high.
Just before cooking, brush the grill clean with a wire brush. Then quickly grease grill with a rag or paper towel soaked in some vegetable oil.
Except when the burgers are being flipped, the barbecue cover should be closed during cooking.
Grill burgers for 3 minutes on one side without disturbing.
Flip the burgers over and cook the opposite side for another 3 minutes.
Continue cooking on the same side without flipping for another 4-5 minutes but reduce heat to medium/medium-low.
To finish, flip and cook the opposite side for a final 4-5 minutes for a burger that is between medium-well and well-done.
If finishing with melted cheese turn the oven broiler on 5 minutes before the burgers come off the grill.
Put each cooked burger on a crusty bun and top with grated old cheddar (1-2 ounces each). Place them under the broiler until the cheese just melts.
