Lemon Roasted Potatoes
As a side dish, serves 6 to 8.
Ingredients
3 lb
1/4 cup
2 1/2 tbsp
2 tbsp
potatoes (prepared weight), pared and quartered
melted butter, or olive oil
lemon juice
concentrated liquid bouillon concentrate (ie. Bovril, Oxo)
Directions
Combine butter or olive oil, lemon juice, and bouillon in a large mixing bowl. Add potatoes and toss until well coated
.
Place coated potatoes in a 9x13 baking dish and bake in a 400°F oven for 45 minutes to 1 hour. Turn and baste potatoes every 15 minutes
