        Lemon Roasted Potatoes



As a side dish, serves 6 to 8.
       Ingredients
3 lb
1/4 cup
2 1/2 tbsp
2 tbsp
potatoes (prepared weight), pared and quartered
melted butter, or olive oil
lemon juice
concentrated liquid bouillon concentrate (ie. Bovril, Oxo)
       Directions
  • Combine butter or olive oil, lemon juice, and bouillon in a large mixing bowl. Add potatoes and toss until well coated.
  • Place coated potatoes in a 9x13 baking dish and bake in a 400°F oven for 45 minutes to 1 hour. Turn and baste potatoes every 15 minutes.
