More of the essential seasonings, plus the addition of garlic and prepared horseradish results in a memorable burger that has full bodied taste.

Worcestershire Sauce
Keen's Dry Mustard
minced garlic
loosely packed, finely chopped, green onion (about 4 to 5 onions)
prepared horseradish
sea salt
fresly ground black pepper
ground bison (approx 20% fat)
vegetable oil

- In a medium sized bowl, lightly beat the egg. Blend in the Worcestershire sauce, dry mustard, sea salt, black pepper, garlic, green onion, and prepared horseradish.
- Add ground bison. Mix by hand until meat and seasonings are evenly blended.
- Shape meat into 6 patties. Place patties on a cookie sheet or serving tray. Loosely cover with plastic wrap and refrigerate for at least an hour.
- Pre-heat the barbecue to medium-high.
- Just before cooking, brush the grill with a wire brush.
- Then quickly grease the grill with a rag or paper towel soaked in vegetable oil.
- Except when the burgers are being flipped, the barbecue cover should be closed during cooking.
- Grill burgers for 3 minutes on one side without disturbing.
- Flip burgers over and cook the opposite side for another 3 minutes.
- Continue cooking on the same side without flipping for another 6-7 minutes but reduce heat to medium/medium-low.
- To finish, flip and cook the opposite side for a final 6-7 minutes for a burger that is between medium-well and well-done.
